Wild Garlic Porkchops & wild garlic ‘half-baked’ potatoes
In the early embrace of spring, as the forest floor comes alive with the vibrant green of wild garlic, we're inspired to bring the flavors of the season directly into our kitchen. This year, our foraging adventures have blessed us with an abundance of wild garlic, prompting a culinary celebration that pays homage to this versatile herb. We've crafted a meal that not only showcases the robust flavor of wild garlic but also encapsulates the essence of home-cooked comfort: generously seasoned pork chops paired with half-baked wild garlic butter potatoes, accompanied by a refreshing wild garlic dressing.
Ingredients:
4 thick-cut pork chops
2 tablespoons of homemade wild garlic salt (Wild Garlic Salt Recipe)
4 large potatoes, halved
4 tablespoons of wild garlic infused butter (Wild Garlic Butter Recipe)
Salt and pepper, to taste
Prepare the Half-Baked Potatoes:
Preheat the oven to 400°F (200°C).
Place the halved potatoes on a baking sheet, cut side up. Season with salt and pepper.
Place a dab of wild garlic infused butter on each potato half.
Bake in the oven until the potatoes are tender and the tops are slightly crisped, about 25-30 minutes.
This recipe is perfect for the less-than-perfect rolls of wild garlic butter! Save those perfect cuts for topping the porkchops after they are cooked.
Prepare the Pork Chops:

Served alongside the main dishes, it added an extra layer of flavor, enhancing the wild garlic theme of our feast.
Make the Wild Garlic Dressing:
In a blender, combine soured cream, yogurt, and fresh wild garlic leaves. Blend until smooth.
Season with salt and pepper to taste.
