Pancakes with raw blackberry filling

Using our homemade ‘freezejam’, we create a delightful whipped cream blackberry filling for our pancakes. The freezejam, with its preserved freshness of autumn blackberries, blends seamlessly into the whipped cream, creating a lush, fruity filling.

Thanks to the stabilizing properties of xanthan gum in the freezejam, the whipped cream maintains its structure, allowing us to use a piping bag for elegant, cake-like decorations.

We start by gently folding our rich, blackberry freezejam into freshly whipped cream, creating a vibrant, flavorful mixture. The xanthan gum ensures the filling holds its shape.

Using a piping bag, we swirl this luscious filling onto each pancake.
