The giant boletus mushrooms

In our wanderings through the forest, we’ve often stumbled upon an extraordinary find – giant bolete mushrooms. And when we say giant, we mean it: many of them weigh more than a pound each. They are a forager’s dream, enough for a full meal with plenty to spare.

These giants are typically Boletus edulis (known as Penny Buns or Porcini) and Boletus badius (Bay Boletes). While larger size often indicates maturity, this is not a drawback but a virtue. The mature mushrooms have a depth and richness of flavor that can be surprising to those new to foraging. It’s akin to the robust savor of an aged cheese, delightfully intense and deeply satisfying.

Drying these larger specimens is a fantastic option. It concentrates their already potent umami character, providing a powerful flavor tool for the kitchen. Think of it as a secret weapon to elevate stews, sauces, and other culinary creations to a new level of deliciousness.

Contrary to what one might assume about such large fungi, these giants are often in remarkable condition. One might expect a mushroom of this size to be riddled with worms and other pests, but surprisingly, this is seldom the case with these specimens. Perhaps this is a form of survivor bias in action; these mushrooms grew to such impressive sizes precisely because they were not besieged by worms and other creatures.

Finding these colossal boletes is always a thrill, a treasure hunt with the most delectable of rewards. It’s not just about the size; it’s about the promise of flavors, the potential of meals to come, and the simple joy of connecting with nature in such a tangible, nourishing way..
