Wild Garlic Butter

In the rhythm of the seasons, there's a special moment when the woods beckon us to partake in their spring bounty, leading us straight to the treasure trove of wild garlic. This aromatic herb not only captivates our senses on woodland walks but also inspires one of our favorite culinary creations: wild garlic butter. This simple yet transformative recipe turns the fresh, vibrant flavors of the forest into a versatile kitchen staple, perfect for elevating everyday dishes into gourmet experiences. - Preserving wild garlic in butter and freezing it, extends the joy of spring's flavors throughout the year.

The process begins with the freshest wild garlic leaves, handpicked from our foraging adventures. We start by chopping a portion of the leaves finely, creating a richly flavored mince that will infuse the butter with its distinctive garlicky-herby essence. Another part is chopped more coarsely, adding texture and bursts of flavor throughout the butter. The remaining leaves are reserved whole, destined to wrap around our butter mixture, creating a beautiful, rustic presentation.

To make the wild garlic butter, we blend these prepared leaves with softened butter, mixing thoroughly to ensure the wild garlic is evenly distributed - or do as we do, mix it less for that charming, spotted appearance. This vibrant mixture is then shaped into a log and wrapped in the reserved whole leaves, adding an extra layer of flavor. The logs are cut into sizes that fit in our containers, and stored in the freezer, ready to be sliced and served at a moment's notice.
